Summary The nutrition education curriculum presented in this project is a behavior-based intervention program designed to improve participants' eating behavior, specifically increasing consumption of fruits and vegetables, thus, decreasing intake of more calorie-dense foods. This project includes the formative development of a nutrition education curriculum to be implemented in 1st and 2nd grade classrooms in an elementary school in the Van Nuys area of the San Fernando Valley. The project also includes a nutrition education lesson for a Parent Participation class at the elementary school. The curriculum was designed to be delivered in a series of four nutrition education classes, focusing on eating fruits and vegetables. Qualitative observations were made as the lessons were delivered to the children; thus, lectures could be improved and modified accordingly.
